Caramel Apple Upside Down Cake
3/4 C. butter, softened
1 1/2 C. sugar
3 eggs
1 tsp. vanilla
1 1/2 C. Flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1 C. butter
1 C. brown sugar
3 apples. Peeled and sliced
In a mixing bowl, combine butter, sugar, eggs, and vanilla.
In another bowl combine flour baking powder salt, and cinnamon. Whisk together. Add the wet ingredients to the dry ingredients and combine. In a medium size sauce pan, melt two sticks of butter and one cup of brown sugar. Bring to a simmer. Allow to bubble for 5 minutes. Pour the hot caramel into a greased 8 inch pan. Arrange the sliced apples into the caramel. Spoon the cake batter on top of the apples. Smooth flat and bake at 350 degrees for 50 minutes. Remove from the oven and loosen from the sides using a butter knife. Carefully flip the pan onto a serving platter. Allow the caramel to drip onto the cake. Serve warm with a dollop of fresh whipped cream or a scoop of vanilla ice cream.
