For tonight’s dinner, I recreated Panera Bread's Chicken Chipotle Avocado Melt Sandwich.
It was an easy dinner, because I bought all of the ingredients already made.
I don’t really have a recipe. Just assembly instructions.

Chipotle Chicken Avocado Melt
Ciabatta bread
Chipotle Mayo
Grilled chicken
Cheddar cheese, sliced
1 Avocado, mashed up
Roasted Red peppers in oil, sliced
Slice the ciabatta in half lengthwise
Spread Mayo on the bottom half of the bread.
Add a layer of bite sized grilled chicken pieces.
Top with cheese.
Place on a baking sheet and place in a 350 degree oven for 15 minutes.
On the top half of the bread, spread the avocado evenly. Add a layer of the red peepers.
Remove the chicken portion of the sandwich from the oven. Assemble the sides. Cut into whatever portions you like.
I served with ready made tomato basil soup and a Caesar salad.
